It's not a matter of "hunger" or "going to the bathroom". It's about still feeling like one is still human and not a numb phantom with no human senses, etc. Flynn doesn't eat because he's "hungry" per se, but to still *feel human.*
Remove something like eating food, and other things, one can loose connection and sanity with the sense of self and feeling like one is human. Any person that's been in a sensory deprevation experience have reported such things.

But try imagining being in "digital space" for "thousands of years", some people do enjoy the experience of eating and tasting food and many other things that are part of experience of being *human*.
Flynn wanted to still experience eating and tasting food so he made that a part of The Grid and his digital form while there.

Factoring in the whole "Grid-as-full-world-simulation" angle Kosinski and crew seemed to be going for in Legacy, I imagine Flynn ages because all the interactions that take place between the particles in his body are modeled accurately there. So his body behaves like it would in the real world, even down to gradually deteriorating over time. Though that begs the question of why he aged so slowly from the perspective of the Grid... You'd think either he wouldn't age at all, being in digital form, or that if he aged, he'd age on Grid time, meaning he would have been dead and buried for a thousand or more years (well, cycles) by the time Sam got there. Another riddle of the Grid... Grid... Grid...
(Personally, I just think they liked the idea of a bearded, patriarchial Bridges playing against his younger self as Clu, and decided to fudge the details as necessary to get that in there.  )

It was not very clear footage, I assumed intentionally and not a film problem at my theatres. If the part is bigger, it would be more Clu-like I think, but if it could be done well, I think Bruce would be up for it too. Looks like work, with the head piece having to be worn every time you do a scene.

Yeah, the flashback had a slightly distorted look around the edges, like it was shot through a distorting lens. You do get a nice look at Tron's face for a couple of seconds when Clu asks Flynn if he's still to create the perfect system, and Flynn says, "Yeah...?". It was short, but it looked convincing to me.
