Happ has this model for PC Arcades. It doesn't have a mech. Although, I can't tell if it has a coin slot, from the picture. I believe it does though. http://na.suzohapp.com/pc/accessories/40071300.htm
Most arcade monitors are 19" - 25". But it really comes down to what you want. The 3 thing to think about is the control panel size, monitor size and cab size and how these all relate to each other in appearance. I'd look at some arcade machines online and find ones that are the most appealing, then look into their dimensions to design one that fits your style. But, you could default to some pre-made plans out there. Here's a link to a online arcade encyclopedia that has user manuals, history and specs. Flipping through some of the manuals might give you some ideas on setting things up.

$30 for a coin door with no mech? Could I just buy this one for $14 with the mech and take it out?
In the one link you gave it shows the Tron Arcade with the screen almost totally horizontal, but most of them are almost totally vertical. So is that just a matter of preference?
And I think I will go with the style that has the control panel off the edges instead of enclosed by the sides.

Hey CB2001, here is the picture of the Arkanoid cabinet:
As you can see there is some scratches on the side and edges. And the lock on the coin box is gone (but that's better then a lock and no key). It is made by GPI (Game Plan Inc.) It still has the model number plate on the back, but the date has rubbed off. The one on ebay is a excellent deal. If you get it, I'd look in to setting it up the way Minions set his up. It might end up being easier than removing the mech. Plus, I can't tell if some of the mech parts are part of the door mold.
If I wasn't going to use a mech and just use a coin door, I'd experiment with mounting the leaf switch above the coin slot. Start out with it mounted at a 45 degree angle then adjust the angle until coins would press the two halves of the leaf switch together, thus completing the circuit. Which leaf switch might come down to just physically experimenting with different leaf switches. Yep. I don't know how much he's willing to help, but it won't hurt to ask. The link I gave earlier to a forum thread started by him, shows his progress on his own cab. The coin mech looks similar to the one you linked to on ebay. Here's the thread.

And is he not the type that normally would help?
Anyway read that post of his and that will be great for the cabinet building plans, but besides where he got the lights and how he messed up with the switches it doesn't say much else about coin doors. Unless I missed it.  Thanks to FlynnOne for the signature!

I did a little research. What you are looking at on ebay is a "Single Front Plate Assembly" and it's also the mech holder. The big empty space between the coin slot and the coin return is where the coin mech goes. There are mechanical and electronic mechs. Mechanical mechs, I think, mechanically complete the circuit in addition to mechanically validate the coin. So, they would, probably, be compatible with mame.
Now, an electronic mech might rely on the arcade software to work properly and would ,probably, be incompatible with Mame. But, that's just a guess. I need to do more research to understand, fully, how the mechs work. I might buy one just to tinker with it. It's got my curiosity going.
Edit - I did find this mechanical coin door. The green wires,I believe, power the lights. Two, of the white and two of the yellow wires are for the coin validation part of the mech. When the coin passes through, it physically slides the white wire connector up to the yellow, completing the circuit. Much like pressing a button. At least that's my theory. It's a little difficult to tell from the pictures.

Sweet! It looks like it's in pretty decent condition. Now the question is if it still works or not. If not, then you've got yourself a good cabinet for a MAME.

I don't know. I think that the controls are saved via software (the MAME emulator or the controller's software). I can't be sure of that myself. My dad is at work right now, so the answer may come up later on today.

Yeah it would be but I still have to work a deal out with them, if they even sell it.

LOL. Yeah, your right... How did I miss that?
After reading up some more, the coin acceptors (mech) can be mechanical or electronic. When the coin is put into the coin slot it passes through the upper part of the mech holder, then goes through the mech or electronic coin acceptor. If the coin is accepted, it goes through a channel on the lower half of the mech holder, which has a coin switch that completes the circuit for the two wires you have wired to it from your panel as the coin button in MAME.
So, if you choose to bypass using a coin holder, you might be able to use the coin switches you linked to earlier. You'd just have to mount it above the coin slot in such a way that it triggered the switch when a coin goes through. Or get the mech holder you were looking at on ebay, and create a channel out of some small pieces of plexiglass to guide the coin down, directly to the lower half of the mech holder, triggering the switch and registering a coin with Mame. That way any coin will work, even tokens.

The arcade cabinets at Disneyland use a joystick to press the WASD or arrow keys on a keyboard inside the cabinet, and a trigger on the stick for firing, and a trackball (like what you see on golf and bowling games) for mouse movement. I can tell the stick is hitting the keys because of the way it felt when I moved the stick. If you're interested in a list of controls, they are:
Move fowards: W or Up arrow key
Move backwards: S or Down arrow key
Rotate tank left: A or Left arrow key
Rotate tank right: D or Right arrow key
