So programs,
I went to Disneyland yesterday for the grand (re)opening for Star Tours.
I have to say the ride was amazingly well done (and worth the 3 hour waiting line). I was grinning from ear to ear afterwards. I was even interviewed about it for some San Fransisco news channel.

Probably next winter. I'd love to go back this summer - I could go to ElecTRONica again - but my family has other plans this summer.

Nope. It's all the new randomized simulator with 3p0 as the pilot.
There is a reference to the old pilot droid from the original. "Rex" is in the droid customs in the queue. Darth Vader - STAR WARS Episode 4: A New Hope
On September 12, 2009 -- at Disney's first ever Comic-Con like convention: the D23 Expo -- an announcement was made of the original STAR TOURS ride's impending closure at Disneyland. Darth Vader and a legion of his stormtroopers were on hand to hear of this ( http://www.youtube.com/watch?v=Hvzc7EN5S_c) -- yet were reassured by a Disney Imagineer that the closing was only temporary -- as a new and improved STAR TOURS ride would be taking its place... i] 2014.
Vader quickly squashed this: "Unacceptable, the Emperor will not tolerate an opening later than 2011...".
Jump to lightspeed to present day -- the first ever ride on the new STAR TOURS 2.0 (also known as STAR TOURS 3-D) occurred on May 20th at Disneyland at a special preview event -- just prior to the ride's opening to the public which is scheduled for June 3rd. I was on this maiden voyage and shot video which shows the newly enhanced queue area and ride itself, which is now displayed for riders in Hi-Definition 3-D that is accompanied by the ride simulator's movements (so while viewable in my video, the full impact of the fantastic 3-D visuals and g-force thrills are only experienced when riding it).
There are multiple destinations that riders can now travel to in the STAR WARS universe with this new version, along with approximately 55 variables in the voyage and story.
While the original STAR TOURS ride was fun and first enabled us to venture into A Galaxy Far, Far Away via a theme park ride: http://herocomplex.latimes.com/2011/03/10/star-tours-flashback-the-rapping-c-3po-of-1987/ -- the characters, settings, and situations in this newly enhanced 2.0 version are much more "STAR WARS identified" -- and the ride itself lightyears ahead in entertainment value and enjoyment.

Is it REALLY that good though? Knowing how the quality of Star Wars changed between the classic trilogy and the new one, it seems like the new adventure could be even more contrived than the old one (as hard as that is to imagine). While getting caught in a Death Star battle kinda made sense, as did doing the trench run (after losing power and being pulled down to the surface by the gravitational field), jumping into a pod race and then somehow latching onto a racing pod, just doesn't make any sense at all.
Taking a trip down to WDW this week and were just going to do MK because of cost constraints, but now knowing that Captain EO is back, and if the new version is up and running there, we might have to see what they've done to it. Frankly, though, I'm terrified. Did you watch Jay West's video? His particular ride took place during Episode 6, and involved being hunted down by Boba Fett while assaulting the Death Star II.
There's (I think) around 40 different films (or "experiences", as they call them) for it.

Everytime I've looked at videos for it, seems like it's always the podrace. I was getting to the point that it was the only video that Disney saw fit to release to the public.

Yeah, I remember thinking the same thing. The pod race is kinda dumb, but it makes more sense when you are there. There are no real attempts at humor though and no Jar Jar. I didn't mind it. The reference to Jabba's barge half way through kept me happy.
The reason there is prequel related stuff in the ride is because the ride takes place in between III and IV. The old ride had a Starspeeder 3000, this one has a Starspeeder 1000. It happens earlier.
(SPOILERS)
The only time a prequel reference ever bothered me was when the simulator goes to Courscant, they have you fly through that stupid battle that was the opening scene for Epic-load III. It makes no sense because this battle would have obviously ended after the Empire is formed, which is established at the begining of EVERY ride . . . WTF Dis? I take the rest of the planet with a grain of salt because it did exist during the original trilogy as the center of the Empire's operations.
The Death Star this time makes sense because it's the first one during it's construction
(you actually fly into it at top speed . . . SO COOL)
Give it a shot. I'm die-hard for the originals and I still loved it. I was giddy as heck after both rides

Maybe it's just a ride for people's enjoyment, and not something that's supposed to be a serious element of canon or continuity.

True, but having the ride fit into the canon is pretty freaking awesome and adds to that enjoyment.
