I have Parallels 6 running XP on a quad core i7 iMac. The game runs at its highest resolution with all effects turned on just fine, so a lesser machine should still work ok.

I had a fresh install of a copy of XP with service pack 2. After applying 75 software updates including service pack 3 and an update of the xbox live software (the game automatically asked for this one), I adjusted the resolution of the game and my system to ~1600x1050 (the best the game can do) and got a nice full screen display of the 27" monitor.
